Summary

In this work we study the evolution of women´s working conditions in the fish canneries from 1947 to 1997, when the last Saupiquet factory closes down. Who are these women? Where do they come from? How are they insured? What does their work consist of?: beheading, disembowelling, cleaning, stewing, placing, setting, washing, packing, order. Toward 1960 is when freezer ships make their appearance, followed by production-line work. In 1981, Saupiquet begins to reduce its personnel, and evolves until the definitive closing of the last of their factories in 1997.
