Summary

In this volume of Zainak we are carrying out an exercise of anthropologic "confluence" in connection with the issue of food, nourishment and health. We count on recent research results that have in common the indicated topics, presenting a series of results obtained from a multidisciplinary practice that is characteristic of biological anthropology and of the social and cultural anthropology. In this effort, the conclusions of the different projects, come to a unanimous conclusion in connection with the anthropologic importance of food and nourishment in our societies. In our societies the effects of the diet and nutritional behaviours have their influence on health as well as on the social models currently and historically underway. Research, and its study and comprehension, have the single objective of obtaining a better knowledge of the human being, his society and culture.
