Summary

Ramona Sainz was the last woman from Pamplona who made wafers in the traditional way and then sold them on the streets of the city. This article presents a combination of the news that has survived to the present day about the activity carried out by this waffle-maker and the photographic testimonies of the protagonist preserved and shared by her family descendants. The combination of the characteristics of both types of sources not only serves to delve deeper into the particularities and aspects related to this trade, but also provides us with a more human and closer look at this old occupation.
