Summary

Barcelona is a place of culinary encounters, where there have been phenomena of appropriation of characteristic elements of other cuisines with which there has been a degree of cultural contact. It is also a capital city, and as such a place of transfer and influence toward other food systems. One just has to see the origin of the basic foods of the various cuisines of this city to admit its multicultural and dynamic character. Some of these effects of these contacts have been there interpretation of autochthonous cuisines as from the addition, substitution and reelaboration of elements originating from each system, the changes in the working and festive calendar and its gastronomic correlation or, simply, the attribution of variety to culinary options.
